Everytime I take the slaw to a pot luck, I usually leave with an empty bowl. Love the light sesame/soy dressing! Try it out and let me know what you think!
Ginger Peanut Ramen Slaw
Ingredients
- 4 cups cabbage, shredded (1/2 head)
- 2 cups carrots, shredded
- 1 cup edamame, cooked and shelled
- 1/4 cup onions (or scallions), chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 cup salted peanuts, chopped
- 1/2 cup bell pepper, chopped (optional)
- 1 packet ramen noodles (without seasoning packet) (optional)
For the Slaw…
- 1/4 cup honey
- 1/4 cup vegetable oil
- 1/4 cup unseasoned rice vinegar
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tbsp peanut butter
- 1/2 tsp salt
- 1/2 tsp Sriracha sauce
- 1 tbsp fresh ginger, minced/grated
- 1 garlic clove, minced
For the Dressing
Instructions
- Combine all dressing ingredients in a small bowl until peanut butter is completely dissolved. Set aside.
- Combine all slaw ingredients in a large bowl. Add dressing and toss. Refrigerate 30 minutes prior to serving. Serve cold.
