Ginger Peanut Ramen Slaw

Everytime I take the slaw to a pot luck, I usually leave with an empty bowl. Love the light sesame/soy dressing! Try it out and let me know what you think!

Ginger Peanut Ramen Slaw

    For the Slaw…
  • 4 cups cabbage, shredded (1/2 head)
  • 2 cups carrots, shredded
  • 1 cup edamame, cooked and shelled
  • 1/4 cup onions (or scallions), chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup salted peanuts, chopped
  • 1/2 cup bell pepper, chopped (optional)
  • 1 packet ramen noodles (without seasoning packet) (optional)
    For the Dressing
  • 1/4 cup honey
  • 1/4 cup vegetable oil
  • 1/4 cup unseasoned rice vinegar
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp peanut butter
  • 1/2 tsp salt
  • 1/2 tsp Sriracha sauce
  • 1 tbsp fresh ginger, minced/grated
  • 1 garlic clove, minced


  1. Combine all dressing ingredients in a small bowl until peanut butter is completely dissolved. Set aside.
  2. Combine all slaw ingredients in a large bowl. Add dressing and toss. Refrigerate 30 minutes prior to serving. Serve cold.
  3. Enjoy!
